Pancakes and trains
Well every Wednesday is Pancake day as breakfast. Josh and I will prepare the ingredients for it and we shall dine to start the day right. It's getting easier and easier now as the steps are in our heads already. Here is what we did.
For the batter,
1 cup of white flour with whole meal flour
1 egg yolk
2 tbsp of molasses sugar
1 tbsp of oil
1 cup of milk
Some pine nuts
Some chocolate chips
Steps:
1. Blend the egg white till it's fluffy.
2. Mix the batter with the egg white.
3. Place some oil on the pan and scoop the batter on it to fry.
4. Flip it after one minute.
To taste, you can actually add avocados and maple syrup! Delicious.
Josh loves his pancakes so much and will point to me the various utensils to use! So proud of him. Kate will come and help to see what I am doing at the cooking area.
Trains

We just bought another wooden train set from IKEA for Josh to extent his train network at home! We are so glad that he loves his train carriages as well as building the train tracks with him.
At times, he would want to change the design of the train tracks. Hence we have to crack our brain together to form new curves for the train tracks and to form higher elevated ones too! Last night we played until 1230am! Oh man. But the end of the day, Josh is happy and I'm tiredly happy. Ha.
Come to think of it, Singapore is extending their train network in these few years and I'm really glad that they take steps to improve the network although it's quite comprehensive already. This will make us go to places that are previously inaccessible. And I would think that it will be like Taiwan. In most of the countries that I have visited, Taiwan's train network is one of the best and elderly friendly too. The train tracks are not so noisy and the passengers are also very friendly. They actively look out for those who need to sit!

We actually used the mat at night because building the train tracks may cause some wooden 'clacking' sounds. We didn't want to disturb Eve and Kate. Hence, we used it. And we have to build within the mat constraint, otherwise the tracks won't be levelled. Some simple engineering involved in playing the train tracks.
